It all began back in 2003. I arrived at a local Chicago establishment looking to enjoy a pleasant meal and watch the Chicago Bears kick off the season. Not surprisingly, the place was full of eager football fans ready to get the season get underway. Crammed in a back corner, I sat back and ordered my meal. I was stuck at this place with a very limited food menu of fried finger food and not so “waist-line friendly” items. On top of having to turn my head almost 180 degrees to get a good view of the game, the bathrooms were small, dirty, and unattended. It hit me right then and there, and my concept was born.
Why couldn’t there be such a place where someone has the option of ordering high quality food items while watching their beloved Bears? I wanted to have the option of ordering a Prime filet mignon steak or wild seafood with the views of the big game right in front of me. The beer selection needed to be expansive with options for everyone. The place also needed to be large enough where guests didn’t feel uncomfortable and forced to squeeze by everyone to move around. Clean, perfectly lit and open bathrooms without the long lines were a must have.
And there it was; the perfect modern public house. I became fixated on creating such a venue. A place people wanted. A large open floor plan where people can feel comfortable, high quality food options to fit everyone’s taste buds, TV screens galore to make the absolute best game day experience, and all while remaining family and neighborhood friendly. It’s the perfect place for an all-around great dining experience.
